    A nice yummy recipe that’s easy to make and will get the children enjoying their vegetables!

    You will need:

    • 1¬†cup¬†shredded zucchini
    • 1¬†cup¬†shredded carrots
    • ¬Ĺ¬†cup¬†spring onions¬†sliced thinly
    • 1¬†egg
    • ¬Ĺ¬†cup¬†almond flour
    • 1¬†Tablespoon¬†arrowroot powder
    • ¬Ĺ¬†teaspoon¬†kosher salt
    • 3 Tablespoons olive oil.

     

    1. Take zucchini and place in a mesh sieve. Allow to drain for 20-30 minutes. Wring out water with a towel. Place shredded carrot in a clean towel and wring out.
    2. Combine almond flour, arrowroot, and salt in a bowl. Add egg and mix. Add zucchini and carrot, mix until a thick batter is formed.
    3. In a non-stick frying pan, heat 2 Tablespoons of olive oil until shimmering. Add scoops of zucchini carrot mixture press down on the centres to form round fritters.
    4. Cook for approximately 3 minutes per side, flipping once in the middle.
    5. Remove to a paper towel-lined plate. Allow to cool slightly. Serve with Aioli.
