With a cold and wet weekend forecast for most of Victoria and New South Wales, let’s indulge in some yummy baked rice pudding!

You will need:
½ Cup Arborio rice.
1 Litre of milk.
1 Vanilla bean split and seeds scraped.
2 Tablespoons caster sugar.
2 Litre ovenproof dish.
Preheat oven to 160 degrees.
Place rice in the dish.
Combine milk vanilla bean (and seeds) and sugar, pour over rice and stir.
Cover with aluminium foil bake for 1 hour, remove foil and continue to bake for 30 minutes.
You can top with anything, butter, cinnamon, berries, jam.
Wrap up and enjoy ?
